GOOGLE: Putting Principles Into Practice

When Google wanted to implement the Menus of Change (MOC) principles for the benefit of its employees and the planet, the company tapped CIA Consulting to lead the operationalization at both the campus and café level. Developed by the CIA and the Harvard T.H. Chan School of Public Health, with an assist from Google on the Sustainable Business Leadership Council, the MOC principles emphasize increasing consumption of plant foods while reducing the role of animal proteins. CIA Consulting worked with the Google Food Team and Bon Appétit Management Company to test the effects of critical control points such as service layout, sensory cues, menu and recipe development, sourcing, and staff training.

Meat consumption was reduced by 20% at the test facilities. Google and the CIA are now developing a World Flavor Lab on the Google campus as a launch pad for further concept and operational testing.
